Spicy (or not) Peanut Chicken

I’m afraid we’ve got no pics for this one darlin because it was THAT DELICIOUS. We ate this over rice with a big salad and pickled carrots. Approximate cost for this meal was $35.00. We fed 12 people at a cost of under $3 per person. 

This is a super easy dinner that my family loves. You can add more spice if you like it like that or none at all if your tongue is more sensitive. 

Spicy Peanut Chicken

3kg chicken thighs

4 tbsp fresh ginger sliced

1 bunch green onion

1/2 cup soy sauce

2tbsp sriracha 

1/2 cup lemon juice

2 cups peanut butter

1/2 cup chopped peanuts

Add 2 tbsp of sugar if desired.

1 cup water or broth


Preheat oven to 400. Brown both sides of chicken in Dutch oven and place in side dish. Use chicken drippings to sauté ginger briefly, then add soy, sriracha, lemon juice and broth. Stir in peanut butter well and bring to light boil. Add chicken back to Dutch oven and bake 40 minutes. Serve over rice with fresh green onion and chopped peanuts if desired.
